Putting a wheat and dairy free twist on a traditional Swiss recipe, Bircher muesli makes for a good breakfast or a post-workout boost. For this variation we’re using quinoa, which was revered by the ancient Incas and is the only grain that is a complete protein as well as a carbohydrate.
Four large handfuls of organic rolled oats
Four large handfuls of quinoa flakes
Two large handfuls ground bran
One handful chopped dried apricots or fruit of your choice
One handful chopped dried dates
One handful crumbled walnuts
One handful crushed almonds, hazelnuts or brazil nuts
Coconut/soya/almond/oat/rice milk or pressed apple juice to cover
Two apples washed and unpeeled
One pear washed and unpeeled
Nutmeg and cinnamon to taste
