A recipe to beat your bloat: slaw monster burger and fries

From celebrity personal trainer Maeve Madden’s new book, Beat Your Bloat, why not try this burger and fries recipe with a healthy twist!

‘This is my version of the ultimate comfort food - chicken burger and coleslaw. Try to cut all your fries the same size and not too large, so that they cook at the same rate, and be wary of adding salt or seasonings with added salt as these draw moisture from the fries and create steam which equals soggy fries!’

Ingredients: serves four

  • 800g lean turkey mince
  • 1 egg, beaten
  • 1 tablespoon extra virgin olive oil
  • 1 small shallot, chopped
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • 80g lettuce, shredded
  • 2 tomatoes, sliced
  • 2 large sweet potatoes, cut into 5mm thick slices
  • 1-2 tablespoons coconut oil, melted
  • seasoning of choice
  • ½ red cabbage, shredded
  • 2 medium carrots, grated
  • 15g flat-leaf parsley, chopped
  • 120g vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • ½ teaspoon celery seeds
  • squeeze of lemon (optional)
  • salt and freshly ground black pepper, to taste

Method

  • Preheat the oven to 180°C/gas mark 4.Line a baking tray with greaseproof paper and pop it in the oven to heat.
  • In a large bowl, mix the sweet potato fries with the coconut oil. Add a little seasoning as the oil will help the spices stick to the sweet potatoes. Evenly arrange the fries on the preheated baking tray and bake for 40 minutes. You will need to turn them halfway through to ensure that all sides are cooked.
  • Combine the turkey, egg, oil, shallot and garlic in a bowl. Mix well and shape into four patties. Season the patties with the oregano and some black pepper. Place on the grill and cook for 10 minutes, turning them over after five minutes.
  • Meanwhile, make the slaw. Combine the cabbage, carrots and parsley into a big bowl.
  • In a separate bowl, stir together the mayo, vinegar, mustard and celery seeds and season with salt and black pepper - sometimes I add a squeeze of lemon. Pour the dressing over the shredded slaw veggies and mix well.
  • When the patties are cooked through, serve topped with lettuce and tomatoes and the fries and slaw alongside.

TIP: I just top my burgers with lettuce and tomato as I find red onion can cause bloating. Another alternative is to add 60ml vegan mayonnaise and 60ml dairy-free yogurt to the slaw instead of vegan mayo.
