We all know that food can have a big impact on mood and no one knows more about nutrition than Lifehouse Spa and Hotel. Making sure you start the day feeling your best, here they share some of their top recommendations for an inspired and healthy breakfast…

Berry chia seed breakfast pudding

Ingredients

  • Chia seeds
  • Coconut water
  • Berry mix: blueberries, blackberries, blackcurrents
  • Mint
  • Coconut milk

Method

  • Soak the chia seeds in coconut water, used for its electrolyte properties and because it makes the seeds easier to eat.
  • Blend the berry mix with coconut milk to create a mousse.
  • Top with a mint leaf.

Bircher Muesli

Ingredients

  • Four large handfuls of organic rolled oats
  • Four handfuls of quinoa flakes
  • Two handfuls ground bran
  • One handful chopped dried apricots or fruit of your choice
  • One handful chopped dried dates
  • One handful crumbled walnuts
  • One handful crushed almonds, hazelnuts or brazil nuts
  • Coconut/soya/almond/oat/rice milk or pressed apple juice to cover
  • Two apples washed and unpeeled
  • One pear washed and unpeeled
  • One banana
  • Nutmeg and cinnamon to taste

Method

  • Combine all ingredients except the banana, apple and pear in a bowl, and cover with the nut milk or apple juice.
  • Grate the apple and pear, add to the blended mixture and stir immediately to keep the apple from discolouring.
  • Add nutmeg and cinnamon.
  • Place in the fridge overnight.
  • In the morning, slice or mash banana into the mixture together with some honey, coconut cream and fresh mixed berries.
  • Keeps for up to five days in fridge.

Mint and moringa breakfast bowl

Mighty moringa is the new king of superfoods. It’s loaded with 24 times the iron content of spinach, 21 times calcium of milk, and it is almost 25% protein.

Its benefits include protecting and nourishing hair and skin, protecting the liver, fighting against bacterial infections, and helping to balance mood. In particular, Lifehouse recommends using frozen organic moringa from Pure Foods.  By using the frozen option over the powdered varieties it retains better taste, texture and nutrient density.

Ingredients

  • One banana
  • One handful of spinach
  • One handful of green grapes
  • One handful of fresh mint leaves
  • 100-150ml of almond milk
  • One tub frozen organic moringa
  • Juice of lime

Method

  • Put all the ingredients in a blender and blend until smooth.
  • Pour into a bowl and garnish with a choice of toppings such as fresh fruit, seeds and dessicated coconut.
