In the heart of the Ribeira Sacra region, a uniquely beautiful natural area in inland Galicia, Parador Santo Estevo sits within the converted Santo Estevo Monastery. The building dates back to the sixth and seventh centuries with both baroque and romanesque styles throughout its 77 guest rooms, each of which offers different views of the green landscape and the amazing Sil River Canyon.

The hotel’s Restaurante Dos Abades is located in what was once the monastery stables and offers Galician cuisine beneath an incredible stone vault. Surrounded by a forest of oak and chestnut trees, one of the most important local ingredients is chestnuts, which you can sample in a variety of different recipes, including fried eggs with sautéed horse chestnuts and apple chorizo sausage - the forest also makes for a superb view.
