Just in case the working week has got to you a little, take a look at Lifehouse Spa and Hotel’s second winter blues-busting recipe featuring salmon and walnuts, which are both high in mood enhancing omega 3 fatty acids!
Two salmon fillets
Juice of 1 lemon
Good pinch Maldon sea salt
For the Pesto
Handful basil leaves
Handful flat leaf parsley
Four cloves whole peeled garlic
Six tbsp extra-virgin olive oil
Blend all the ingredients for the pesto in a food processor.
Preheat oven to 180°C
Drizzle lemon juice and sprinkle sea salt over salmon
Cover salmon fillets generously with pesto mixture
Bake fish covered for 20-25 minutes
