Recipe for a healthy breakfast: How to make Lifehouse Spa’s Bircher muesli

A great breakfast or a post-workout energy boost, putting a wheat and dairy free twist on this traditional recipe, for this variation we’re using quinoa, revered by the ancient Incas and the only grain that is a complete protein as well as a carbohydrate.

The old adage dictates that breakfast is the most important meal of the day - the feast after the overnight fast that sets you up for the day. Whether breakfast is your thing or not, Lifehouse Spa's bircher muesli is a beautiful way to get going. Here's their recipe for a twist on the Swiss classic.

Bircher muesli ingredients

  • Four large handfuls of organic rolled oats
  • Four large handfuls of quinoa flakes
  • Two large handfuls ground bran
  • One handful chopped dried apricots or fruit of your choice
  • One handful chopped dried dates
  • One handful crumbled walnuts
  • One handful crushed almonds, hazelnuts or brazil nuts
  • Coconut/soya/almond/oat/rice milk or pressed apple juice to cover
  • Two apples washed and unpeeled
  • One pear washed and unpeeled
  • One banana
  • Nutmeg and cinnamon to taste

Method for making bircher muesli

  • Combine all ingredients except the banana, apple and pear in a bowl, and cover the ingredients with the nut milk or apple juice.
  • Grate in apple and pear and stir immediately to keep apple from discolouring.
  • Add nutmeg and cinnamon.
  • Place in the fridge overnight.
  • In the morning slice or mash banana into mixture together with some honey, coconut cream and fresh mixed berries.
  • Keeps for about five days in fridge.
